My dear is singular meaning that it is only referring to one thing or person. My dears is plural, meaning that it is referring to two or more things or people.
For example, if speaking to a person, my dear can be used. “Thank you my dear.”
Speaking to multiple people would turn it into, “thank you my dears.”
It’s really just a term of endearment
